Danzai mian is a prized southern Taiwan specialty with quite a history. Back in the day, these noodles were made as an answer to the region’s problem with food shortages during the non-fishing season. It was invented in the late 1800s by a fisherman, and its name was lifted from the manner it was sold on the streets – carried on shoulder poles or “danzai” by peddlers. Today, the noodles are served in a bowl of broth topped with minced pork and boiled shrimp.
